  • 1/4 cup balsamic vinegar

  • 1/4 cup grated Parmesan cheese (optional)

  • 2 cloves garlic, minced

  • 1 teaspoon dried Italian seasoning

  • Salt and pepper, to taste

  • Fresh parsley for garnish (optional)

Directions

  1. Start by preheating your oven to 425°F and lining a large baking sheet with parchment paper or foil for easy cleanup.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, Italian seasoning, salt, and pepper.

  3. Place the chicken breasts and assorted vegetables on the prepared baking sheet, arranging them in a single layer.

  4. Drizzle the balsamic mixture evenly over the chicken and vegetables. Make sure everything is coated well.

  5. Sprinkle the grated Parmesan cheese over the chicken and vegetables.
